Apple/Walnut Cake

1 cup sugar

1 cup flour

1/2 cup coarsely chopped walnuts

2 cups chopped unpeeled apples

1 tsp. cinnamon

1/2 tsp salt

1 egg

1/4 cup salad oil

1 tsp vanilla

1 tsp baking soda

powdered sugar (optional)

  1. Heat oven to 350. Butter an 8×8 baking dish.
  2. Combine “dry” ingredients (sugar, flour, nuts, apples, cinnamon, salt).
  3. Mix “wet ingredients (eggs, oil, vanilla, soda).
  4. Combine wet and dry ingredients, pour into baking dish.
  5. Bake 45 min. Cool. Sprinkle with powdered sugar if desired.
