1 quart salad greens, in bite size pieces
1/2 cup shredded fresh sorrel
1/3 to 1/2 cup crumbled feta cheese
1 firm pear, thinly sliced
1/3 cup toasted walnuts
For the dressing:
2 Tbsp lemon juice
3 Tbsp peanut or walnut oil
1/4 tsp salt
1/8 tsp pepper
2 tsp chopped lemon thyme
Combine lemon juice, peanut or walnut oil, salt, pepper and lemon thyme. Set aside.
Place greens in a salad bowl. Mix with dressing and then toss with feta cheese, pear slices and walnuts before serving.
Serves 4.
