Swiss Steak

2 pounds boneless round steak, 1 1/2 to 2-inches thick

1/4 cup all purpose flour

1/2 tsp salt

1/2 tsp dried basil

1/4 tsp pepper

1/4 tsp garlic powder

1/8 tsp ground allspice

2 Tbsp cooking oil

8 small boiling onions

1 green pepper, seeded, cut into 8 chunks

2 large red potatoes, pared, quartered

one 16-ounce can whole tomatoes

1/2 cup water

Cut steak into 6 pieces, removing fat if necessary.

Combine flour and seasonings; sprinkle over meat.

Using the edge of a plate, pound flour into meat on both sides until all flour is used.

Heat oil in a 6-quart pressure cooker over medium heat.

Add onions and green pepper and saute for about 3 minutes, or until tender, stirring constantly. remove vegetables from cooker; set aside.

Add meat and brown on both sides. Return vegetables to cooker. Add potatoes, tomatoes and water.

Close pressure cooker cover securely. Place pressure regulator on vent pipe. Cook for 15 minutes at 15 pounds pressure. let pressure drop pf its own accord. Do not attempt to remove cover until pressure is completely reduced. Remove meat and vegetables to a warm platter.

If desired, thicken remaining liquid by mixing 2 Tbsp cornstarch with 2 Tbsp cold water; blend into hot liquid. Cook and stir until mixture boils and thickens. Serve with steaks and vegetables.

Serves 6.
