3 large Roma tomatoes or 1 cup red cherry tomatoes
2 large yellow tomatoes or 1 cup yellow pear tomatoes
2 Tbsp chopped fresh basil
2 Tbsp olive oil
1 Tbsp red wine vinegar
2 tsp minced fresh ginger
2 tsp lime or lemon juice
1 tsp soy sauce
1/4 tsp freshly ground pepper
Peel, seed and dice the tomatoes if using the large varieties. If using small pear or cherry tomatoes, simply cut them into quarters.
Combine the tomatoes with the basil, olive oil, wine vinegar, minced ginger, lime or lemon juice, the soy sauce and pepper. Set aside for up to 1 hour.
Makes about 2 cups (serves 4).
