Shrimp Scampi with Orzo

1 pound peeled raw shrimp

3 TBS EVOO

1 TBS lemon zest, 1 TBS lemon juice

salt, pepper, red pepper flakes TT

2 TBS butter

2 cloves garlic chopped

1 cup orzo

1/3 cup white wine

2 cups boiling water or stock

3 TBS chopped parsley

  1. Toss shrimp in 1 TBS EVOO with lemon, salt, and peppers, set aside
  2. Heat 2 TBS EVOO and butter in skillet, toast garlic and orzo, 2 min.
  3. Add wine, cook until absorbed, 1 min.
  4. Stir in stock and simmer covered 12 min.
  5. Top with shrimp, cover, cook 3 min.
  6. Serve sprinkled with parsley and lemon, salt, and pepper TT
