Crispy Parmesan Roast Chicken with Lemon

1 lemon

1 tsp coarse salt

1 tsp black pepper

1 tsp chopped rosemary

TT red pepper flakes

4 chicken thighs

EVOO

1/3 cup grated parmesan

  1. Preheat oven 400
  2. Zest lemon and combine with salt, pepper, rosemary, red pepper.
  3. Pat chicken dry, coat with rub, allow to absorb flavors.
  4. Drizzle with EVOO and roast 20 min.
  5. Top with parmesan and roast another 20 min.
  6. Remove from heat, deglaze pan with lemon juice, pour over chicken
  7. Serve NOTE: for whole chicken roast at 425, 30 min. + 30 min.
