1 lemon
1 tsp coarse salt
1 tsp black pepper
1 tsp chopped rosemary
TT red pepper flakes
4 chicken thighs
EVOO
1/3 cup grated parmesan
- Preheat oven 400
- Zest lemon and combine with salt, pepper, rosemary, red pepper.
- Pat chicken dry, coat with rub, allow to absorb flavors.
- Drizzle with EVOO and roast 20 min.
- Top with parmesan and roast another 20 min.
- Remove from heat, deglaze pan with lemon juice, pour over chicken
- Serve NOTE: for whole chicken roast at 425, 30 min. + 30 min.
