Baked Fish with Celery and Apple

INGREDIENTS:
3 tablespoons unsalted butter2 celery ribs, thinly sliced

1 small tart apple, cored, sliced
1 small onion, thinly sliced

Salt and freshly ground pepper to taste

1 pound capensis, Antarctic queen or similar fish filets

INSTRUCTIONS:

Preheat oven to 400°.

Choose a casserole dish just large enough to hold the fish fillets in 1 layer. Rub the dish with a little of the butter. Scatter the celery, apples and onion in the dish with a pinch of salt and place in the oven (no need to wait for it to fully preheat). Bake until the vegetables are sizzling and beginning to color, about 10 minutes.

Season fish with a little salt and pepper.

Remove the baking dish from the oven, push the vegetables to the sides, and place the fish in the dish. Spoon the vegetables over and around the fish and dot with the remaining butter. Cover with foil and bake 10 minutes per inch of thickness, or until the fish is tender when probed with a skewer. Transfer to serving plates and spoon some vegetables and buttery juices over each serving.

Serves 4.
