Spaghetti with Uncooked Smoked Salmon, Capers, and Dill

INGREDIENTS:
6 ounces thinly sliced smoked salmon, very coarsely chopped
1/4 cup + 2 tablespoons olive oil
2 large garlic cloves, finely chopped
1 generous tablespoon tiny capers, drained
1/4 cup coarsely chopped fresh dill
Freshly ground black pepper
2 tablespoons freshly grated Parmesan cheese, + extra for
serving
1/2 pound spaghetti or vermicelli
1/4 cup diced red onion
INSTRUCTIONS:

Place the salmon — separating pieces that clump together — in a large serving bowl.

Gently stir in the oil, garlic, capers, dill, pepper and 2 tablespoons cheese.

Cook the pasta in a large pot of boiling salted water until al dente. Drain well and add the salmon mixture.

Toss until combined.

Sprinkle with onion and serve with extra cheese.

Serves 3 or 4.
