Apricot Ricotta Toasts

Olive oil 2TB

Apricots 4 fresh

Country bread 4 slices ½”

Prosciutto 4 slices

Ricotta, room temperature ½ Cup

Mint leaves, 6-8 roughly torn (optional)

 

  1. Heat grill pan, coat with olive oil then:
    1. toast prosciutto
    2. toast apricot both sides til just tender
    3. toast bread
    4. While toasts are warm:
      1. spread with ricotta
      2. top with prosciutto
      3. top with apricot
      4. garnish with mint
