15 Bean Soup

1 lb dry beans

Ham, ham hocks or ring of smoked sausages, chopped

1 Large onion, chopped

1 Large can tomatoes

Red pepper (optional) or 1 tsp of chili powder

Juice of 1 lemon

1 Clove minced garlic (optional)

Salt and pepper to taste

Wash beans thoroughly. Bring large pot of water to boil, add beans, bring to boil for 2 minutes, soak covered for 1 hr.

Drain, add 2 quarts of water. Add ham, ham hocks or ring of smoked sausage. Bring to a boil. Simmer slowly 2 1/2 to 3 hours. Add onions, tomatoes, red pepper or chili powder, lemon juice, garlic (if using), salt and pepper to taste.

Simmer another 30 minutes. Add contents of spice packet, one or two minutes before cooking is completed.

Serve with rye bread and green salad.
